Subsequent aging of sparkling bases in barrels from the Massif Central in France, to preserve and elevate the cuvee, all for a period ranging from 6 to 40 months , with the Time “as the one ally to perfect artistic and sought Sparkling.”

The Cuvées are assembled between them ( marriage ) with the addition of French selected yeast and raw cane sugar from the Indian Ocean to start the second fermentation called “fermentation” in bottles strictly in a horizontal position.  This phase lasts from 12 to 48 months. At the end of the cycle, the colonies of yeast inside the bottle through the rémuage are transferred on the neck of the bottles ready for disgorgement.
