the term "Ripasso" identifies a precise enolagical technique of praduction of the "VaIpoliceIla" wine, which boasts along and consolidated tradition. It calls for the maceration of the Valpolicella wine with the fermented marc of the withered grapes previously used for the production of Amarone and/or Recioto.
