Choice of grapes
The careful selection of Chardonnay and Pinot Noir grapes coming from Trentino Alto Adige and destined for the production of the classic method sparkling wines of Maison it is still followed today by members of the Rinaldi family.
Soft pressing
Pressing of the grapes takes place softly, with care according to ancient family traditions.
Finishing
Subsequent refinement of the sparkling wine bases in barriques from the central French massif to preserve and elevate the cuvées to perfection.
Second fermentation and Rémuage
The Cuvées are assembled together (marriage) with the addition of selected French yeast and raw cane sugar from the Indian Ocean to begin the second fermentation.
At the end of the cycle, the yeast colonies inside the bottles are transferred through the rémuage to the necks of the bottles ready for dégorgement/disgorgement.
Dégorgement à la volée
When the Rinaldi family believes the right time has come, the most exclusive cuvées are opened according to the ancient method of dégorgement à la volée.
